Auntie Lizzie's Recipe for Pulled Pork Sandwiches

Well...what can I say? It's summer, and it's just too darn hot to cook sometimes hahaha.  So today I have introduced a yummy recipe that was given to me by my Aunt that I will soon make myself with a little of my flair thrown in ;) So here it is: Auntie Lizzie's Recipe for pulled pork sandwiches and a side salad

ok first I get a pork butt any size I happen to pick one up at the dollar general for about 5.00 . You can get your BBQ Sauce of choice. Cook lil butt in Crock Pot for about 5-6 hrs on low (depends on size) season as you wish.
I put Rooster sauce in mine because that is what I do..
warm your hamburger buns or your choice of bread roll..
 
Salad
you will need 2 Japanese cucumber ( dollar general) 1 pkg cherry tomatoes, 1 medium red onion , 1/2 can of olives 1 firm Avocado. ( 4 for 1.00 yes dollar general) Cilantro just tear and wash as much as you would like and toss in Rice Vinegar... Lovely Cucumber salad ..
So SIMPLE>>>:)
you can add of course Feta cheese I selected Avocado in place of the cheese because they were 4 for a 1.00

2 GREAT MEALS IN 1 BBQ RIBS AND STUFFED BELLPEPPER

Well as you can tell now, I don't cook on weekends lol, I mean I hardly cook on weekends ;)  And being that I live in the central valley it was too hot to cook inside so we decided to BBQ on Monday and get take out yesterday.  On Monday, my little love was not here to help me cook because he was invited to go see Monster's University with his grandparent :) but I thought this would be a good simple flavorful time to make something that is still easy enough to cook with him and brings a great recipe to all the parents out there as well.  I made BBQ ribs with a side of stuffed bell peppers on the side.  I maybe could have made the presentation look better, but I was in a rush 1. It was hot 2. I was hungry ;p  So with that being said...let's get to it shall we?
These are all the seasonings I used for my rib rub.  Garlic salt, pepper, old bay seasoning, Cajun seasoning, brown sugar, and some worchetshire sauce.
We get the slab of ribs we want to use and rub all dry ingredients first.  Like you must already know, I am not the measuring type of person, I just got with the flow ;)  I usually measure by sprinkling the seasoning onto my meat to get a nice feel for how much per portion that I'm using, but I would recommend rubbing the brown sugar in first so the moisture from the meat absorbs some of that up right away.  I also place my meat on the bag it comes into not have any lingering bacteria on surfaces of any kind, then you can just pick it up and throw it out.  Meat bacteria freaks me out!!  So after you have all your dry ingredients on there I sprinkle some worchetshire sauce on to help break down more of the brown sugar :) After this is all done I take 2 pieces of foil and place the ribs on one and cover with the other, then roll the edges tightly so no steam escapes...I could have sworn I took a picture of this but I did not :(  When the bbq grill is ready we put the ribs on for approximately 40 minutes, flipping once.  They come out nice and tender everytime!!
Oh and never forget the onion for added flavor ;)
Oh remember the tacos with Spanish rice we made previously? Well.......I had leftovers ;)  I took the bell peppers that I had (before they went bad) and halved and seeded them and placed them cut side up.  Then I took my left over taco meat and rice, mixed that together and started layering that mixture along with the cheese of your choice, with the rice meat mixture as the final layer, then individually wrapped each bell pepper completely with foil.  Those then go on the grill when the ribs have about 15-20 minutes left. Now for the kicker, my tomato beef gravy...this was soooooooooo good I even surprised myself. (first time making it)
 
 
Ingredients are as follows: Butter, flour, onion, garlic salt, pepper, cayenne, tomato sauce, and beef stock
Get your roux going with a couple tablespoons butter and a couple of tablespoons flour with about 1/4 onion chopped anyway you like, let the flour brown because you do NOT want to taste any flour whatsoever.
Add your spices so they can toast along, it brings out more flavor from the spices, and again I do not measure I just know what my ratios look like, I like a lot of spice so I put a good amount of cayenne in there. Then you slowly add your beef stock after everything is finished toasting to make a gravy.  Add a little bit of tomato sauce, just enough that you can taste the tomato flavor and walahh!!

Like Isaiah likes it, I also made Kraft mac n cheese because he's not to fond of the bell pepper taste even though I made him eat it because it is was his dinner veggie.
How it should be!! Ladle the tomato beef gravy over the stuffed pepper, with the rib on the side, flavors galore!! I even gave my parents some stuffed peppers and they absolutely loved them... and this has been your double whammy :) Because I feel bad when I don't cook, not necessarily the not cooking part, just because I can't post anything when I don't lol..until next time, which might be next week because it is still hotttttttttttt lol

Tacos and Spanish Rice

Tonight's dinner was a favorite that we usually make like once a week.  Tacos!!!! We usually make chicken tacos but tonight we had ground beef :) Like every day, let's start with the ingredients
In the back you see the shells I already made and in the front are the ingredients for the rice.  Rice, onion, garlic salt, tomato sauce, cumin and chicken boullion.  I'm not the measuring type I just put in what I feel is the right amount of seasoning, but remember to not oversalt!! But it's all easy none the less.  For this whole meal, all I did was fry the shells, cut the onion, and season everything.  The rest was up to my son and he enjoyed every minute!!
He added the rice and onion to a small amount of oil to toast it all together lightly, while it's toasting I added in the garlic salt and cumin and he crumbled up the chicken boullion.  We let it toast til it was fragrant and then added the water.  Rice to water ratio is always 1:2.  So in our case we used 2 cups of rice and 4 cups water.  You can also use any kind of stock you like but we used the boullion cube instead ;p
Stir it all up together and then cover and simmer with medium low heat and let it cook, next we brown our beef and add some garlic salt and pepper and taco mix if you like.
Then we grated the cheese and I chopped up some spinach instead of lettuce (more nutrients).  He was trying to play and grate at the same time, so I told him it would be no laughing matter if he managed to grate off a piece of his skin....he stopped playing around lol
Assemble your tacos how you like them, he like them with just cheese.
How it should be done! I would have tomatoes, sour cream, and avocado also (if I had them on hand) but the main thing is the homemade salsa (secret ingredient).  To sum it up, my son ate both of his tacos and 2 servings of rice, and was raving about how good his food turned out!! :))  Tonight he will be with his grandparents while I work so I guess it's just sandwiches for dinner :)) See you next time we cook!! French Onion Soup Casserole

Well this past weekend was a good one because I didn't cook!! Ha!  Come Monday I was ready to make an easy peasy dinner...French bread pizza....but guess what! My bread was too hard :(  So being that it was a rainy day yesterday.....RAIN IN JUNE! I decided to make a fall meal that I have never tried before and it was very simple to make. Start by preheating your oven to 350 degrees.
Here are the ingredients and my son's head hehehe.  You are going to need 3 to 4 medium onions (sliced), one can of cream of something soup (I used Mushroom), 2/3 cup milk, 1 small cap of soy sauce,  cheese of choice, I used mozzarella because that's what I had on hand for the French bread pizza :(, oh yeah and butter to sautee the onions in.  Can't forget the main ingredient...your kid! :)
So next I had my son throw in the butter and the onions and mix them around until they were translucent, but of course that photo was being stubborn and didn't want to upload :/  So here's the step after that.  we combined the soup, milk, and soy sauce and stirred it all together over a low flame.
We poured the mixture down into the casserole pan that contained the onions, you then put about half the cheese you are going to use into the dish and mix around until melted. The recipe called for 2 cups but I used less to my discretion. Then we place French bed slices on top and put in the oven for 15 minutes.  Take it out of the oven, push bread slices deep in the dish and top with remaining cheese and bake for 15 more minutes. Then ........
Dinner is Served :)  Tonight we are going to make TACOS!!!! So please come and check back tomorrow :)

Chili Dogs


This one is a no brainer I know, but I just got paid so you know what that means.......GROCERY SHOPPING!! I'm looking forward to trying out new easy recipes that I got from Pinterest!! There will be a lot more crockpot recipes......because if your child is anything like mine....I trust him near a crockpot more than the stove :)  He's 6 by the way, even though he looks much older lol!  Well last night's dinner was Chili Dogs very simple!!  The first thing you want to do is put all your ingredients out so you child knows what the meal is consisting of.
 
Next I had him stab the hot dogs with a fork..he really enjoyed this part.  Boys!! haha

Yup still ashy with a icepack on his head..silly kid!  He was being too gentle with the cheese so I had to show him how it was done lol

Crockpot BBQ Chicken

I am new to this blog stuff, but last night I had a vision.  My own dream is actually to own a restaurant of my own, and being that my son is off of school for the summer, I started to incorporate him into our daily meals (simple recipes of course).  So last night we made an easy BBQ chicken in the crockpot, with mac and cheese and spinach.  It was delicious!!  If I knew I was going to start this blog, I would have taken pictures from beginning to end but I didn't :(  But I do have a picture of the finished product :) I promise my future pictures will be of better quality. This was the best one he took without looking crazy lol! But all you really have to do is have all your ingredients measured out in order to have your kids just toss them in.  This was simple!!

BBQ Crockpot Chicken-we used 2 leg quarters
                                         about 2 tbsp garlic salt
                                         about 1tbsp pepper
                                         half a medium yellow onion (sliced)
                                         BBQ sauce
                                         our secret ingredient
                                         LOVE
Let the chicken cook on High for 2 hours before adding any of the sauce, add half after 2 hours and then the rest 10 minutes before serving, cook mac and cheese by box instructions and spinach to liking. Enjoy!!
